McCain Classics Broccoli & Blue Cheese Soup

• Ingredients
  500g McCain Classics Broccoli Florets
  1 onion, chopped
  1 garlic clove, minced
  200g McCain Classics Diced Carrots
  ½ celery chopped
  700ml vegetable stock
  5 sprigs parsley
  5 sprigs coriander
  100g blue cheese, crumbled
  50ml butter
  100ml cream
  salt and pepper to taste
• Method
  Sauté the onion, garlic, carrots and celery until soft.
  Pour in the vegetable stock and bring to boil.
  Add the parsley and the coriander followed by the broccoli, simmer for 15 to 20 minutes.
  Immediately blend the soup to maintain a bright green colour. Stir in the crumbled blue cheese.
  Season well with salt and pepper. Finish the broccoli soup off with a knob of butter and a little cream.Tip: Serve with garlic croutons
